    Easy Scrambled Eggs

    These easy herbed eggs take only a few minutes to whip up, and they are absolutely delicious!

    Breakfast is my favorite meal of the day, and this Easy Scrambled Egg recipe is my go-to on most weekends! Especially on Sundays when we can just relax and enjoy our breakfast and coffee at a more leisurely pace.

    I like to serve them with a side of crispy bacon and some toast or English muffins with jelly or jam. If you'd like to try your had at making homemade jam, check out my recipe for Easy Strawberry Jam. You can substitute any fruit for the strawberries, and it's much easier to make than you might think!

    From start to finish, you've got a delicious meal on the table in 30 minutes or less. These easy herbed eggs are a hit with family and friends when we get together for brunch.

    Directions for Making Easy Herbed Eggs

    Ingredients

    • 6 large eggs
    • 4 Tbsp. heavy cream
    • 2 Tbsp. fresh herbs of your choice (chopped chives, green onion, parsley, basil, etc.). I'm using chopped green onions here.
    • ½ tsp. salt
    • ½ tsp. freshly ground black pepper
    • Shredded cheddar cheese, optional, to taste. I use about ¼ cup.

    Feel free to be creative with the herbs or vegetable you use. I'm using chopped green onions here, but chopped bell peppers are good too. You can use any color you'd like, red, yellow, orange or green (or a mixture of all of them!)

    Some chopped firm tomatoes and chopped onion would be delicious, too! Just be sure to sauté the vegetables in the melted butter for a few minutes BEFORE adding the egg mixture to the pan in order to soften them.

    Equipment / Supplies

    • Large bowl for mixing
    • Large non-stick skillet

    Be creative with the vegetables you use - I'm using green onions here but you can use whatever you have on hand.

    In a large mixing bowl, whisk all of the ingredients.

    In a large, non-stick pan, melt 1 TBSP. of unsalted butter

    Once butter is melted, add the egg mixture to the pan.

    Cook egg mixture until moisture has evaporated and eggs have stiffened and are a little shiny. Do not overcook.

    Transfer to a pretty serving bowl and serve warm with a side of crisp bacon or sausage and some toast or English muffins.

    Ingredients
      

    • 6 large eggs
    • 4 Tbsp. heavy cream
    • 2 Tbsp. fresh herbs, chopped I like fresh chives but you can use fresh parsley, basil, or chopped green onion as well
    • ½ tsp. kosher salt
    • ½ tsp. freshly ground black pepper
    • 2 Tbsp. unsalted butter

    Instructions
     

    • In a large mixing bowl, whisk all of the ingredients until well combined
    • Melt the 2 Tbsp. unsalted butter in a skillet over medium heat
    • Once the butter has melted, add the egg mixture to the skillet and give it a good stir
    • Let the eggs "set" for about 30 seconds, then start to stir them around in the skillet
    • Allow them to cook just until they are a little shiny - do not overcook!
    • Serve immediately
