
Green beans are one of my favorite vegetables, and with good reason! According to Just Fun Facts (about green beans), they are an excellent source of vitamin K, as well as a very good or good source of the following:
Very Good Source
- Manganese
- Vitamin C
- Dietary fiber
- Folate
- Vitamin B2

Good Source
- Copper
- Vitamin B1
- Chromium
- Magnesium
- Calcium
- Potassium
- Phosphorus
- Choline
- Vitamin A (in the form of carotenoids)

- Protein
- Omega-3 fatty acids
- Iron
- Vitamin B6
- Vitamin E
The article also lists some of the known health benefits of green beans which include improved heart and bone health, a boost to the immune system, help in preventing cancer and managing/preventing diabetes, aid in weight loss, and contributing to the elimination of harmful free radicals.
These powerhouse veggies are really very simple to prepare. They can be eaten raw or grilled, boiled, steamed, stir-fried, roasted or sautéed - my favorite is sautéed, and that is the method I'm presenting here. Making the Easy Seasoned Green Beans
INGREDIENTS
- 2 Tbsp. unsalted butter
- 1 lb. fresh green beans, cleaned and trimmed
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
DIRECTIONS:
- In a medium skillet, over medium heat, melt the unsalted butter
- Add the green beans and turn to coat with the melted butter
- Sauté for 6 - 8 minutes, or until they've reached your desired consistency
- Remove the pan from the heat and sprinkle the beans with the salt and pepper to taste, tossing to thoroughly coat the beans
- Serve immediately
As an option, you can add ½ tsp. of any of these seasonings if you wish:
- onion powder
- garlic powder
- cumin
- marjoram
- oregano
- paprika, smoked or sweet
Serve these easy seasoned green beans as a side to compliment any main meat dish. I made them the other night as a side to grilled pork chops with a mesquite marinade and roasted baby red potatoes with kosher salt, freshly ground black pepper and fresh thyme. They would also make a perfect side to Chicken Dijonnaise.
