
Fluffy homemade pancakes! Making them from scratch is easier than you might think, and they taste much better than any of the mixes you can buy in the store.
There's just something about a plate of delicious, hot homemade pancakes that makes people happy, don't you think? Topped with melted butter and syrup, every bite is delightful!
Whether you're feeding a small group or a large crowd, pancakes are relatively quick to prepare and get on the table fast. Serve them with a side of crisp bacon or breakfast sausage along with hot coffee or cold juice to complete the meal.
In this post I'll share with you my favorite recipe for making homemade fluffy pancakes, both the dry mix as well as instructions on how to use it. The dry mix can be stored in a dry, airtight container for up to 6 months. When you're ready to use it, just scoop what you need right from the container, whisk in some melted butter, eggs and milk and you're ready to go.

To Make the Dry Pancake Mix
INGREDIENTS:
- 7 cups all-purpose flour
- 3 Tbsp. baking powder
- 1 Tbsp. baking soda
- 1 Tbsp. Kosher salt
- 1 ½ tsp. cardamom

In a large bowl, thoroughly whisk all the dry ingredients together then place in a large, dry airtight container like the one in the top left corner in my photo above.
To Make Fluffy Homemade Pancakes
The following recipe feeds 2 - 4 people. Double it if you're feeding more.
- 2 cups dry pancake mix
- 1 ¼ cups milk
- 3 Tbsp. melted butter
- 2 large eggs
- Whisk the ingredients together in a large bowl then let sit for a few minutes to let the batter begin to react.
- While waiting, place your serving platter in the oven (this one by Le Creuset is great - love the handles and it's oven proof), and preheat the oven to 225 degrees. This will keep your pancakes warm as you cook them without drying them out.
- When your griddle is ready, place about ⅓ cup of batter onto the griddle for each pancake.
- Cook until the bottom is brown and bubbles have formed on the top of the pancake.
- Flip over and continue to cook until lightly browned.
- Place the cooked pancake(s) on the warmed serving platter, and repeat until all the batter is gone.

Fluffy Homemade Pancake Mix
Ingredients
To Make the Dry Pancake Mix
- 7 cups All-purpose flour
- 3 Tbsp. Baking powder
- 1 Tbsp. Baking soda

- 1 ½ tsp. Cardamom

To Make Fluffy Homemade Pancakes (Feeds 2 - 4 People)
- Whisk together 2 cups of the dry pancake mix, 1 ¼ c. milk, 3 Tbsp. melted butter and 2 large eggs and allow to sit for a few minutes to let the batter begin to react
- While waiting, place your serving platter in the oven (this one by Le Creuset is great – love the handles and it’s oven proof), and preheat the oven to 225 degrees. This will keep your pancakes warm as you cook them without drying them out.
- If you’re using a stove top griddle (I like this one from Nordic Ware), turn on the heat and bring to desired temperature. To test, dip your fingers into a glass of water and drop the droplets from your fingers onto the griddle. If it sizzles slightly, it’s ready. Too much sizzle, the griddle is too hot – turn the heat down a little.
- If you’re using an electric griddle (this one by Presto is a good option – I love the removable handles), turn it on and let it get to temperature.
- When your griddle is ready, place about ⅓ cup of batter onto the griddle for each pancake.
- Cook until the bottom is brown and bubbles have formed on the top of the pancake.
- Flip over and continue to cook until lightly browned.
- Place the cooked pancake(s) on the warmed serving platter, and repeat until all the batter is gone.
- Serve warm with butter and your favorite syrup
